Would my horse make a good hunter/jumper?

Yes usually appendix QH are decent jumpers. I would deff say try and find a trainer to help you and your horse learn the basics of jumping. I would also suggest getting some beginner jumping books and going over those and learning to count strides and stuff like that. :)
