Why does my hedgehog "huff" at me?

Sometimes, not all the time, when i try to pet my hedgehog she will make a huffing noise and stick out her quills at me. I've only had her for about two weeks, but i've handled her every day and i would think shed be used to me by now. She doesn't do this all the time, sometimes she's just perfectly willing to let me play with her. Is there anything I can do to stop the huffing and poking?
